Guest guest Posted September 11, 2003 Report Share Posted September 11, 2003 Most vegetables are blanched (briefly cooked in boiling water) before freezing. The express purpose of this is to kill the enzymes in the food so they deteriorate at a slower rate while frozen. Looks to me like this is exactly the opposite of what we are looking for in a raw foods program... I think that fruits can be frozen without blanching, however.
