Kombucha is a symbiotic blrew of bacteria and yeast brewed from sugar, tea and some KT to start. If brewed to completion it is extremely tart and still alive so it's raw, but if it's not completely brewed the residual sweeteneing is from the sugar and that's refined. So to qualify as raw it would be so tart you'd barely be able to sip it. It is an extemely powerful detoxifier.
