Here's a recipe for Corn Chowder from The Raw Gourmet (Nomi Shannon).

INGREDIENTS

4 cups fresh corn kernels (approximately 4 large ears)

2 cups almond milk (or substitute soy or rice milk)

1 avocado, cut in chunks

1 teaspoon ground cumin

2 teaspoons finely minced onion

1/2 teaspoon sea salt

Extra corn kernels for garnishing

Sunflower sprouts (optional) for garnishing

 

INSTRUCTIONS

In a blender, combine the corn, almond milk, avocado, cumin,

minced onion, and salt. Blend well. Pour the soup into serving bowls

and garnish with a handful of corn kernels and some sunflower

sprouts. Serves 2 - 4

Thanks. That looks wonderful. When you do that, do you make your own

almond milk, or use the stuff in a container?

Margie,

 

I've never made the corn chowder. I was just giving you a recipe

that looked good. I'm sure it would taste even better if you made

your own almond milk. There's a recipe for that in The Raw Gourmet

as well.

Kristi,

 

Almond milk is raw - made by blending soaked almonds and water.

 

You can also make raw milk from soaked hulled sesame seeds and from

sprouted quinoa. Raw grain milks can be made from sprouted wheat,

kamut, amaranth, millet, spelt and oats.

 

Soy or rice milk would be cooked.
