Since doing a lot more raw food in the past month, I feel so much better. I have more energy and feel more in balance, less moody as long as I can rest when I need to which is sometimes challenging being a Mum to two young children. I have been vegan or regular veg for the past 9 years. My dh and children have been eating more raw as I have platters of delicious fruit easily available at all times. I mostly like simple meals, but I am ready to try some of the more complicated raw recipes that I think my family would enjoy. I recently tried my first young coconut and it was sooooo good! It was very hard to open it though and my dh ended up using a screwdriver and hammer. Perhaps I should get a machette? (sp?) Does anyone have a trick to opening these delicious things?
