Peter: Eat them one portion at a time.

Yams and potatoes are full of starch so the word is caution.

The highest concentration of good stuff is in the skin or close to it.

Small portions are ok but larger portions will call upon insulin to convet

excess blood sugar to glycogen which the liver then converts to white fat.

This, over time, can lead to insulin rsistance, " syndronme X " * and diabetes.

Interesting, Rusty,

 

My medic has counselled roots with the thought or science that as the

sugars in roots are complex. It takes time for the body to break them

down and thus the insulin production will be reduced. On the other hand

she assumes that I will cook the roots. Cutting insulin production the

primary aim of the exercise.

 

Medic also said lighten up on sweet fruit. It makes me wonder where to

go for carbohydrate. It all seems like a balancing act! Am inclined to

think that a balance is the answer with a slow intake on the fruit as

suggested by Roger. Also eat less overall.

 

On anther matter, I am interested to hear that SARS is a cousin of the

common cold. Of course we can read anything into anything but a thesis

that the recent introduction of grain into the Chinese diet as a

consequence to the actions and thoughts of Mao might be revealing or

even further evidence that the human species should pay more attention

to the food it eats.
