In 1900 in Chicago there were 5,000 people in the Chicago Raw Foodists club. He said raw foodism was a bigger movement then than it is now. He asked the audience to come up with one word that dismantled the raw foodists of the time. I guessed properly and said, " Germs.” The Germ Theory took hold and many of those people must have lost faith in raw foods. Doug made an interesting point. He said the doctors treat this theory as a fact. Then why do they still call it the Germ THEORY, why not the Germ Fact? He spoke about the importance of eating whole foods. He called all oils heavily refined foods. It takes something like 7 olives to make a teaspoon of Olive Oil. He also doesn't believe that juicing is beneficial. Why are we removing the fiber? Fiber is an important nutrient. I know some of you might disagree. I have heard of some people having problems with Diabetes by drinking too much carrot juice. He spoke about running up the Empire State Building Steps. He said that the fastest time for doing that was under 10 minutes. Most people couldn't do it in an hour. You have to build up to it. He was making the same analogy to transitioning to a raw food diet. Most of us aren't Superman, we can't take one leap and get to the top. We have to take each step. He did not elaborate on what those steps were. He said the intestinal flora and fauna are made weaker by eating food that is Cold. This somehow impairs digestion. In a years time he and Roz eat at least 200 different kinds of fruit and 50 different vegetables. For the most part though it's lettuce and celery. In China people who want to commit suicide do so by eating just 1 ounce of salt. Nama Shoyu and all Soy Extract products contain Excitotoxins. He spent a few days with Dr. Blaylock who is the Neuro-Surgeon who wrote the book Excitotoxins: The Taste that Kills. These excitotoxins are found in MSG, NutraSweet and many other products. These can be quite dangerous and for some people lead to death. Excitotoxins stimulate the neurons in our brains to death. I recommend you look this book over if you are still eating cooked foods. It's very likely you are ingesting excitotoxins and have no idea that you are. It's a common ingredient. Doug mentioned that the Cattleman and Dairy Associations heavily influence the FDA's fat recommendations. Even with this they still only recommend 20% of ones calories to come from fat. He also says that the Udo's oil guy, someone who makes his living selling oil only recommends 15% of your calories coming from fat. He said that fruits average 2% to 8% fat content. The USRDA recommends that 7.6% of our calories come from protein. The World Health Organization has an even lower recommendation. So his protein recommendation is actually higher than both of those groups. Have you ever thought of calories per bite? He said that fruit averages 2 times more calories per bite than vegetables. Bananas are 5 times more per bite. Persimmons 8 times more. I'm not sure on this one but he said something like the average fat is 20 to 50 times more calories per bite than vegetables. We really do not need to worry at all about a dietary deficit if we eat raw - with or without avocadodos. Mankind has a much richer source of variety available to his diet than any other animal on the planet. Yet he seems constantly worried that he is not getting enough of one element or another when all necessities of life are usually in his diet in overabundance. The Koala bear gets all it needs and cannot make itself, exclusively out of Eucalyptus leaves and does not need to worry either. Clearly the authors of Genesis were right when they suggested that man leaves the Garden of Eden at his peril. In fairness to David Wolfe, his possible error is of a small degree if he has lead his readers to eat more than necessary of vegetable fats. I suggest that in the period of transition a heavier dose of vegetable fat may help to cope with the withdrawal from carbohydrate and fat packed cooked food. Moreover he warns about nuts and seeds.
