Actually, other nuts and seeds are also regularly heated. They are also often immersed in substances, in order to give them a certain coloring, that most raw foodists would find objectionable. Just because a nut or seed is organic does not mean that it is unheated. The only way you can know absolutely for sure if a particular nut or seed is heated is by calling the nut or seed farmer. Employees of health food stores and food distributers often give out wrong information about this sort of thing. If you want the truth, call or email the farmer directly.<br><br>Many so-called 'raw' recipe books actually use many ingredients that are heated. When i looked at Juliano's book i noticed around 20 different ingredients he used that have been heated, i aassume he uses those same heated ingredients at his supposedly 'raw' restaurant. I think that, in most cases, these authors are not even aware that certain foods have been heated. However, i was quite surprised to see that Juliano thought that Miso was raw, i thoght most raw foodists were aware that all types of miso have been cooked. <br>You'll probably get the strictest raw, unheated recipes in books by authors like Ann Wigmore or Viktoras Kulvinskas, but some of their books with recipes are out of print.
