Maybe I'll be able to quit them someday, once I get more used to my raw vegetables and fruit diet. " Sounds as if I should soak my raw nuts before eating them. Maybe they would digest better that way. Is it a good idea to soak nuts the same as grains? Soaking the nuts releases the enzyme inhibitors and most raw food recipes call specifically for soaked nuts. I soak them overnight and then sprout them for one day. They don't develop tails in a day and still look and taste like nuts. If I'm not putting them in a recipe then I dry them out in my dehydrator so they get crunchy again. I make up a month supply at a time so doing all this isn't too much of a hassle. When they are done store them in an airtight container in the fridge or freezer.
