Two hundred chefs from across China, including Hong Kong and

Macau, pledged at a recent two-day meeting in Beijing to keep rare animals

out of their cooking pots and to encourage fellow chefs to do the same.

 

" The signatories pledge to love nature, protect the environment,

help maintain the ecological balance and refuse to cook rare or precious

species, " reads a manifesto issued by the chefs.

 

According to an official from the Chinese Wildlife Protection

Association, which is involved in the project, the objective is to convince

at least a million of China's eight million chefs to sign the manifesto by

2006.

 

A 1999 study by the Chinese wildlife organisation found 53

species of wild animals were used in Chinese cooking, including 14

supposedly subject to strict conservation measures. Guangdong gourmets prize

some dishes which horrify animal lovers, such as bear paw pads and the

brains of living monkeys.

 

" It's horrible, I feel so sad when I see the treatment of these

animals, " said Gao Lianqing, 25, one of the chefs who signed the manifesto.

 

" It's up to us to set the example. "
