I wonder if this might be a good opportunity to seize the day and put out some sort of paper outlining all the existing and prospective costs of intensified poultry production in HK and on the mainland. Especially in HK, the close confinement of so many birds in a constrained region is sure to produce more and more variants of avian flu as the years go by. There's no way to vaccinate against these rapidly mutating viruses. It's only a matter of time before one slips through biosecurity measures and causes economic losses that stagger the economy. Meanwhile, one or more variants are sure to be extra virulent and fatal to humans. I have one recipe for vegan burgers that taste great but they fall apart because there's nothing in it to bind them. I was worried that this recipe would do the same thing.
