Am I dreaming or do I really recall a posting of vegan tiramisu? If I wasn't

dreaming, I'd really appreciate it being re-posted.

Light Tiramisu

8 ounces semisweet chocolate

1/4 cup refrigerated or frozen fat-free egg

product -- thawed

1 cup sugar

1 1/2 teaspoons vanilla

1 8 oz package fat-free cream cheese -- cut into pieces, room

temperature

1 tablespoon instant espresso powder

1/4 cup hot water

1 cup cold water

1 13.5 oz fat-free pound cake

OR

1 10.75 oz frozen reduced-fat pound cake -- thawed, cut into

1/2-inch slices

1 8 oz container frozen light whipped topping -- thawed

 

In food processor bowl with metal blade, finely chop chocolate. Set aside.

In food processor bowl with metal blade, process egg product and sugar for 30

seconds. Add vanilla; process 1 minute or until pale yellow. Add cream cheese

pieces, a few at a time, processing until smooth. Spoon mixture into medium

bowl. Cover; refrigerate 1 hour.

In shallow dish, dissolve espresso powder in 1/4 cup hot water; add 1 cup cold

water. Quickly dip cake slices into espresso, turning to coat all sides.

Arrange slices in bottom of ungreased 13 x 9-inch (3 qt) baking dish or 12-cup

shallow dish, smoothing with fingers to mold cake slices together. Sprinkle

with half of the chopped chocolate.

Fold whipped topping into cream cheese mixture. Spoon and spread over

chocolate. Sprinkle with remaining chocolate. Cover; refrigerate at least 3

hours or overnight.

To serve, cut into squares. Store in refrigerator.
