Carrot Soup

Amount Measure Ingredient -- Preparation Method

3/4 cup chopped onion

1 teaspoon minced garlic

1 3/4 teaspoons non-dairy margarine

2 cups chopped carrots

2 cups chopped potatoes

1/4 teaspoon sage

1/4 teaspoon thyme

4 cups UnBeef Broth (recipe will follow) or

UnChicken Broth

1/4 teaspoon sea salt

1/4 teaspoon cayenne pepper

 

Saute the onion and garlic in the margarine until the onion is transparent. Add

the rest of ingredients. Bring to a boil, reduce heat, and simmer, covered, 30

minutes. Cool a bit, then blend in a blender. Reheat if need be.
