Vegan - Broccoli, Bean, and Spaghetti Soup

Yesterday when I mentioned the egg substitute, I gave the wrong name. It's

called Egg Not!

When I try this recipe, I'm going to use soba noodles. The broth recipe will

follow.

Broccoli, Bean, and Spaghetti Soup

1/3 cup chopped onion

1/2 teaspoon minced garlic

3 1/2 teaspoons corn oil

2 cups cooked dried beans

4 cups chopped broccoli

6 cups chopped tomato

1/2 teaspoon basil

1/2 teaspoon oregano

1/8 teaspoon cayenne pepper

1/2 teaspoon sea salt

2 cups UnChicken Broth (recipe will follow)

1 cup spaghetti -- uncooked, broken in pieces

 

Saute the onion and garlic in the oil. Combine all the ingredients, except the

spaghetti, and cook for 30 minutes. While this is being done, cook and drain

the spaghetti. When the soup has cooked for 30 minutes, add the spaghetti and

cook for 5 more minutes.
