Potato-Cheese Soup

Amount Measure Ingredient -- Preparation Method

1 onion -- chopped

1 clove garlic

1 tablespoon oil or butter -- or more if needed

4 medium potatoes

2 carrots

3 cups milk

1/2 cup grated cheddar cheese

OR double the cheese

2 teaspoons salt

1/4 teaspoon pepper

1 tablespoon chopped fresh parsley

 

Saute the onion, and garlic if desired, in the oil or butter in a large, heavy

pan. Add the potatoes and carrots and water to cover. Cook until tender. Roughly

mash the vegetables, keeping some larger pieces.

 

Add milk, cheese, and seasonings. Heat until cheese is melted and soup is piping

hot -- but don't let it boil.
