Guest guest Posted November 30, 1999 Report Share Posted November 30, 1999 * Exported from MasterCook * Lentil Nut Loaf Recipe By :Laurel Robertson Serving Size : 6 Preparation Time :0:00 Categories : Loaf Nuts Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 onion -- chopped fine 1 tablespoon oil 2 cups cooked lentils -- Drain, reserve liquid 1/2 cup whole wheat bread crumbs (about 2 slices) 1/2 cup chopped toasted walnuts OR toasted sunflower seeds 1/2 teaspoon sage or thyme 2 tablespoons whole wheat flour 2 eggs -- beaten 1/2 cup lentil broth or water 2 teaspoons vinegar 2 teaspoons soy sauce 1 cup cooked rice 1/2 cup ketchup diced onion -- for garnish 1 tablespoon toasted sesame seeds (optional) Saute onion in oil until translucent and slightly browned. Preheat oven to 350 F. Mix ingredients except sesame seeds and place in greased loaf pan. Sprinkle top with sesame seeds. Bake for 30 minutes covered, then for 10 minutes uncovered, or until browned. Serve with ketchup, mustard, sauce or gravy. Good with mashed potatoes and steamed broccoli.
