Tofu Sour Cream (Laurel)*

Amount Measure Ingredient -- Preparation Method

1/4 cup lemon juice

2 tablespoons oil

1 tablespoon light miso

1/4 teaspoon mustard

2 tablespoons water -- if needed

1 tablespoon shoyu -- or other flavoring

1 1/2 pounds tofu

 

Makes 1-1/2 cups.

 

Blender: Place all ingredients except tofu in blender Add tofu bit by bit,

blending smooth with each addition. If the mixture stops moving, turn off

blender and stir, then blend again. Add tofu and repeat until all is included.

 

Processor: Put it all in and process until creamy smooth; adding water if

necessary through the chute.

WATER: You probably won't need any water when using soft tofu.

 

FLAVORING: Shoyu is adding salt: you could use soy sauce, tamari, or fish sauce.
