Banana Bread (1 Loaf)

Amount Measure Ingredient -- Preparation Method

3 ripe bananas (1 cup mashed)

1 lemon -- juiced

1/3 cup oil or butter

1/2 cup brown sugar

1 1/2 cups whole wheat flour

1/2 teaspoon salt

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 cup wheat germ

1 cup chopped dates -- optional

1 cup toasted nuts -- optional

 

Preheat oven to 375F. Mash bananas and mix with lemon juice until smooth. Cream

butter or oil and sugar together and add banana mix, stirring well. Sift

together flour, salt, baking powder and baking soda. Mix in wheat germ. Add to

the banana mix and stir in dates and nuts if desired. The dough will be very

stiff. Turn into greased 4x8-inch loaf pan and bake about 45 minutes. To test

for doneness, insert a knife into the loaf: if it comes out clean, the bread is

done. (You can also bake banana bread in an 8x8-inch pan, or make 12 cupcakes.

Bake these about 1/2 hour.)
