This recipe has been very popular recently on the fatfree list. I made it

last Friday and we decided that it is one of the very best stews we have

every eaten. I skipped the asafoetida powder and the lemon juice and

poured in the whole can of hominy. I think that it is the spices that make

it great, so don't do a lot of playing around with them.

Amount Measure Ingredient -- Preparation Method

2 cups onions

2 tablespoons sauteeing liquid

1 cup chopped celery

1/4 cup garlic

1 tablespoon blackstrap molasses

28 ounces canned diced tomatoes

16 ounces canned mashed pumpkin

3 cups beans

1 cup water

1 cup chopped sweet potato

1 cup white hominy -- not drained

1 1/2 teaspoons salt

1 1/2 teaspoons cumin

1 1/2 tablespoons chili powder

1 teaspoon crushed chiles

1/4 teaspoon fenugreek

1/4 teaspoon coriander

1 teaspoon ginger powder -- up to 2

1/8 teaspoon asafoetida powder

1/2 lemon -- juice of

 

Saute onions in liquid until softened. Add remaining ingredients except

lemon juice and cook. Add lemon juice. Cook slowly until thick and sweet

potato pieces are soft, about 1 to 2 hours.
