I've made them with 1 chopped apple plus cranberries (1 rounded cup of fruit, total) and oatmeal (instead of the coconut). These and lemon bars are always a hit. warm wishes -pat * Exported from MasterCook * Cranberry Pecan Bars with Coconut Recipe By :Barb Frye, Burnsville, MN, 1990/10 Serving Size : 36 Preparation Time :0:00 Categories : Cookies & Bars Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup all-purpose flour 2 tbsp sugar 1/3 cup margarine or butter 1 cup finely chopped pecans -- divided 1 1/4 cups sugar 2 tbsp all-purpose flour 2 eggs -- beaten 2 tbsp milk 1 tbsp finely shredded orange peel 1 tsp vanilla 1 cup chopped cranberries 1/2 cup coconut COOKIE CRUST: In a medium mixing bowl combine the 1 cup flour and 2 tbsp sugar. With a astry cutter, cut margarine or butter into the flour mixture till the mixture resembles coarse crumbs. Stir in 1/2 cup of the pecans. Press flour mixture into the bottom of an ungreased 13x9x2-inch baking pan. Bake in a 350F oven for 15 minutes, or until lightly brown but not completely baked. FILLING: Meanwhile, combine the 1 1/4 cups sugar and the 2 tbs flour. Stir in the eggs, milk, orange peel, and vanilla. Fold in cranberries, coconut, and the remaining chopped tecans. Spread over partially baked crust. Bake for 25 to 30 minutes more or until the top is golden. Cool in the pan on a wire rack. Cut into 36 bars while warm. Cool completely before serving.
