The book was originally published in 1994 in Australia, so maybe these recipes qualify as being Australian! * Exported from MasterCook * Sweet Potato Lasagne Recipe By :Vikki Leng Serving Size : 8 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 quantity Quick pasta sauce (recipe to follow) 8 ounces instant lasagne sheets 2 cups cooked or canned red kidney beans -- drained and rinsed 1 pound sweet potato -- cooked and pureed 2 quantities light white sauce (recipe to follow) 3 ounces mushrooms -- sliced 1/2 cup grated mozzarella cheese Place half the pasta sauce on the base of a lasagne dish and top with a layer of lasagne. Spread the beans on top of the lasagne, top with another layer of lasagne, then the remaining pasta sauce and another layer of lasagne. Spread the sweet potato over the lasagne, top with another layer of lasagne, half the white sauce, mushrooms and more lasagne. Finally top with the remainiing white sauce and the mozzarella. Bake in a moderate oven (350F) for 45 minutes. Description: " This is one of my sister's culinary creations and is sweet, nutty and irresistable-just like her!
