I wrote the the poster who lived in England and asked what Brown Sauce was, but never got a response. Here is a recipe for Brown Sauce which appears to be a dark gravy. * Exported from MasterCook * Brown Sauce Recipe By : Linda McCartney's Home Cooking, page 143 Serving Size : 1 Preparation Time :0:10 Categories : Sauces And Marinades Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons butter or margarine 1 large onion -- chopped finely 2 tablespoons flour 1 1/2 cups dark vegetable sauce 1/2 teaspoon dried sage 1/2 teaspoon dried thyme salt and freshly ground black pepper -- to taste 1 tablespoon soy sauce Melt the butter in a frying pan and saute the onion until lightly browned. Sprinkle the flour over the onions and stir to make a thick paste. Gradually add the stock to the thick paste, stirring constantly to avoid lumps. Bring the sauce to a boil, add the herbs, salt, pepper and soy sauce. Simmer gently for 3 minutes and use immediately.
