Kiwi Vinaigrette

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

4 kiwi fruits -- peeled & coarsely chopped

1/4 cup red wine vinegar

OR apple cider vinegar

1/4 cup canola oil

1 tablespoon honey

1/2 teaspoon white pepper

1/4 teaspoon salt

 

Place all ingredients in a blender or food processor fitted with a steel blade.

Process until smooth and creamy, 5 to 10 seconds.

Pour into a serving container and serve at once or refrigerate for later

Mango-Papaya Vinaigrette

1 large ripe mango -- peeled, pitted, & diced

1 large papaya -- peeled, seeded & diced

1/3 cup canola oil

1/4 cup apple cider vinegar

1 tablespoon honey

1/2 teaspoon white pepper

1/4 teaspoon salt

 

Place all ingredients in a food processor fitted with a steel blade or in a

blender, and process until smooth, 5 to 10 seconds.

Pour into a serving container. To serve, drizzle the dressing over tossed green

salads. Refrigerate remaining dressing for later.
