Guest guest Posted August 31, 1999 Report Share Posted August 31, 1999 * Exported from MasterCook * Pumpkin Bread Recipe By : Serving Size : 16 Preparation Time :0:00 Categories : Soy Breads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2/3 cup sifted soy flour 3/4 teaspoon salt 1 cup sifted all-purpose flour 1/4 cup soy oil 1/4 teaspoon baking powder 1 1/4 cups sugar 3/4 teaspoon baking soda 4 egg whites -- well beaten 1 1/2 teaspoons cinnamon 3/4 cup pumpkin -- canned 1/2 teaspoon ground cloves 2 tablespoons water 1/4 teaspoon nutmeg Sift and measure soy flour and all-purpose flour. Measure other dry ingredients except sugar, and sift together with flour. Set aside. Cream soy oil and sugar together. Add egg whites and beat until light. Blend in pumpkin and water. Add dry ingredients in two portions, blending well after each addition. Pour batter into greased 9x5x3 inch loaf pan. Bake at 350øF 65 to 70 minutes.
