Here's a favorite recipe of my daughters. We made these for our new

neighbors and they loved them. They asked if we used real butter! :-)

PEANUT BUTTER CAROB CHIP COOKIES

Amount Measure Ingredient -- Preparation Method

2 cups smooth peanut butter -- natural

1 1/3 cups honey

2 teaspoons vanilla

1 teaspoon salt

1 3/4 pints whole wheat pastry flour

1 teaspoon baking soda

1 teaspoon baking powder

1 cup dairy free carob chips

 

Cream together the peanut butter, honey, vanilla, salt, and carob

chips. Slowly add the flour until mixture becomes a soft dough. Do

not knead, or dough will become crumbly.

 

Roll into 1 " balls. Place on a cookie sheet, and then press down with a

fork, making a criss-cross pattern.

 

Bake at 350 degrees for 10 - 15 minutes. Let cool before removing from

pan.

 

Makes approximately 1 1/2 dozen.

NOTES : The original recipe does not call for the baking soda or baking

powder. We added that based on other recipes we have.

 

These are great without the carob chips, too!

 

I have sometimes substituted maple syrup instead of honey and that works

well, too.
