Easy Apple Spice Cake

Amount Measure Ingredient -- Preparation Method

2 cups packed brown sugar

1/2 teaspoon ground nutmeg and salt

1/2 cup soy margarine

1 cup cold coffee

2 eggs

2 cups pared -- diced apples

2 1/2 cups all-purpose flour

1 cup raisins

1/2 cup soy protein isolates

1 teaspoon vanilla

1 teaspoon each: baking powder -- grated lemon peel

-- and ground cinnamon

topping*

 

Cream sugar and margarine until light and fluffy. Add eggs, one at a time,

beating after each addition. Combine flour, soy protein, baking soda,

baking powder, lemon peel, spices and salt; mix well. Add dry ingredients

alternately with coffee; mix well. Mix in apples, raisins and vanilla.

Spread batter in oiled 13x9x2-inch cake pan. Sprinkle with Topping. Bake

at 350øF, 45 minutes or until wooden pick inserted near center comes out

clean. Cut cake 4 x 6. Makes 24 servings.

 

*Topping: Combine 1/4 cup each granulated and packed brown sugar and chopped

walnuts; mix well. Makes 3/4 cup.
