Following is my version. <G> Deanne ========================= * Exported from MasterCook * Tofu Burgers Recipe By : Tofu Cookery Serving Size : 6 Preparation Time :0:00 Categories : American Burgers Lunch Sandwiches Supper Tofu Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds tofu -- mashed 2 cups whole grain bread crumbs, fine 1 tablespoon soy sauce 1 teaspoon garlic powder 1/4 teaspoon black pepper 1 teaspoon salt 1/2 cup celery -- chopped fine 2 teaspoons onion -- powder 1/2 cup cornmeal 1/4 cup unbleached white flour 1/4 teaspoon salt Combine in a bowl the tofu, bread crumbs, soy sauce, garlic powder, pepper, salt, celery, and onion powder. Mix well. Form into 3 " patties. Mix together the cornmeal, white flour, and salt to make a breading mixture. Roll the patties in the breading mixture. Fry in a skillet with 1/4 " of oil. Brown on both sides. Drain on paper. Serve hot on a bun with garnishes or plain. - - - - - - - - - - - - - - - - - - ============================================ * Exported from MasterCook * Tofu Burgers - Deanne's version Recipe By : My version of a recipe from Tofu Cookery Serving Size : 12 Preparation Time :0:00 Categories : American Burgers Lunch Sandwiches Tofu Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds tofu, extra firm -- mashed with a fork 2 cups whole grain bread crumbs -- fine 1 tablespoon soy sauce 1 teaspoon garlic powder 1 teaspoon salt 2 stalks celery -- chopped very fine 2 medium carrots -- chopped very fine 1 teaspoon onion powder 1/4 cup nutritional yeast 1/2 cup cornmeal 1/4 cup unbleached white flour OR whole wheat pastry flour Drain the tofu and wrap in several layers of white paper towels. Let sit or press with something heavy for about 15 minutes. Peel the carrots and process in food processor until very, very fine. Do the same with the celery, separately. Mash the tofu with a fork or process in the food processor. Add all the other ingredients and mix well. Form into whatever size burgers you like. Brown the burgers in a nonstick frying pan with a bit of olive oil spray or a touch of olive oil. - - - - - - - - - - - - - - - - - - NOTES : I have a mini-chopper food processor and I use that for the carrots and celery. It does a nice job of getting the carrots and celery very, very fine. My kids don't like to see " things " in their burgers. :-) To make the bread crumbs, I toast some bread ends and then break them into pieces and process in the food processor until very fine. I like " Italian " style bread crumbs so I add a bit of garlic powder, onion powder, Italian seasoning, and a good portion of parsley (until it looks right).
