Mardi Gras Beans Savory Bean Topping * Exported from MasterCook * Mardi Gras Beans Recipe By : McDougall Program for Women, page 288 Serving Size : 8 Preparation Time :0:25 Categories : Beans And Legumes Main Dishes, Vegetarian Vegetables Mcdougall Program For Women Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup water 1 large onion -- chopped 2 stalks celery -- chopped 2 carrots -- chopped 1 green bell pepper -- chopped 1 teaspoon minced fresh garlic 1/2 pound sliced fresh mushrooms 30 ounces canned kidney beans -- drained and rinsed 29 ounces canned chopped tomatoes 1 teaspoon dried oregano 1 teaspoon dried basil 1 teaspoon dried marjoram 1/4 teaspoon crushed red pepper 1 tablespoon brown sugar 1 tablespoon Dijon mustard 1 cup chopped Swiss chard 1 cup chopped green onions Preparation Time: 25 minutes Cooking Time: 30 minutes Servings: 8 Place the water in a large pot with the onion, celery, carrots, hell pepper, and garlic. Cook, stirring occasionally, for 10 minutes. Add the mushrooms and cook for 5 minutes. Add the beans, tomatoes, oregano, basil, marjoram, and red pepper. Cook for 10 minutes, then add the brown sugar and mustard. Mix well, add the Swiss chard, and cook for 5 minutes longer. Top with green onions and serve over brown rice. Cook, stirring occasionally, for 5 minutes. Add the remaining ingredients and cook for 15 minutes. Serve over baked potatoes, whole grains, or whole wheat toast or muffins.
