Costa Rican Grilled Vegetables

1 large onion

cut in half lengthwise

then sliced and separated into half-rings

1 zucchini -- sliced

1 yellow summer squash -- sliced

1 thin eggplant -- sliced

1 large portobello mushrooms -- up to 2

thickly sliced -- (optional)

1/4 cup soy sauce

1/4 cup water

 

Preparation Time: 10 minutes

Cooking Time: 15 minutes

Servings: 2

 

Mix all the vegetables together. Set aside.

 

Mix the soy sauce and water together.

 

Heat the grill to medium. Place the vegetables in a flat grilling basket.

Brush with the soy sauce mixture. Cover the grill for a few minutes.

Continue to flip and baste the vegetables until they are tender and

browned; cover the grill between bastings.

 

Hint: Mango Salsa (see separate recipe) goes well with these vegetables.

Mango Salsa

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 cups peel and chopped ripe mango

1/2 cup finely chopped onion

1/2 cup chopped red bell pepper

1 whole fresh jalapeno

seeded and finely chopped

1/4 teaspoon minced fresh garlic

1 tablespoon cider vinegar

1 tablespoon warm water

freshly ground black pepper -- several twists

dash salt

 

Preparation Time: 15 minutes

Chilling Time: 1 hour

Servings: makes 3 cups

 

Combine al the ingredients in a bowl and mix well. Cover and chill for 1

hour before serving.

 

Hint: Be sure to wear rubber gloves when seeding and chopping the jalapeno.
