Guest guest Posted August 13, 1999 Report Share Posted August 13, 1999 oniony * Exported from MasterCook * Vegetarian Tofu Spinach Pie Recipe By :Blanche Agassy McCord Serving Size : 6 Preparation Time :0:40 Categories : Phyllo or Torte Tofu Vegetable Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- *CRUST: 1 3/4 cups whole-wheat pastry flour 1/2 teaspoon salt 1/4 cup canola oil 1/2 cup cold water *FILLING: 1 pound firm tofu (not silken) -- crumbled 4 tablespoons olive oil 2 tablespoons fresh lemon juice 2 teaspoons salt 1/2 teaspoon black pepper 1 teaspoon garlic powder 2 tablespoons canola oil 1 cup onions -- minced 3 cups fresh spinach -- cut into strips 1. Preheat oven to 350 degrees F. 2. Mix flour and salt in a bowl. Combine thoroughly with oil. Add water. 3. Mix until it forms a ball of dough. Roll and flatten dough. Place in bottom of well-oiled glass 9-inch pie dish. Press dough with your fingers, starting from the center until it fully covers the sides of the dish. Make sure the dough is evenly distributed. Prick bottom of dough with fork. Bake for 10 minutes in preheated 350-degree F oven. 4. Mix together in a bowl: the tofu (crumbled by hand or food processor), olive oil, lemon juice, salt, pepper and garlic powder. Set aside. 5. Saute onions in canola (or sunflower) oil until onions are golden. Add spinach and saute for 3 minutes or until wilted. 6. Add spinach and onions to tofu mixture. Spoon into baked pie crust and press in with spoon so top is uniform. Bake uncovered for 30 minutes in preheated 350-degree F oven until top is golden. For shiny finish, brush top of pie with olive oil immediately after removing from oven.
