Baked Radishes

Amount Measure Ingredient -- Preparation Method

1/2 Pound radishes -- cut in half

1 Tablespoon Honey

1 Tablespoon butter

Dash cinnamon

 

Steam radishes for 5 minutes; drain and arrange in a shallow baking dish.

Combine honey, butter and cinnamon in a small saucepan to make a glaze. Pour

over radishes and bake uncovered at 350 until tender, about 30 minutes.

Daikon and Carrot Salad

Amount Measure Ingredient -- Preparation Method

1 medium Daikon -- peeled and shredded

4 medium carrots -- peeled and shredded

1 tablespoon chopped fresh cilantro

2 tablespoons rice vinegar

2 tablespoons soy sauce

2 tablespoons Chinese barbecue sauce

6 tablespoons vegetable oil

 

Mix the Daikon, carrots and cilantro in a large bowl. Combine the vinegar, soy

sauce, and barbecue sauce in a small bowl, blend in the oil. Pour over the

Daikon mixture and season with salt and pepper.

Amount Measure Ingredient -- Preparation Method

1/2 pound radishes -- grated

1 egg -- beaten

1/4 cup milk

1/2 cup flour (white or whole wheat)

1 teaspoon salt

1/2 cup Grated sharp cheddar cheese

 

Beat egg and milk together, add flour and salt. Stir in cheese and grated

radishes. Drop spoonfuls into a small amount of hot oil and sauté until golden

brown on both sides. Drain excess oil and serve hot.

Red Radish Soup

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

3 tablespoons butter

3 green onions -- white part sliced

6 cups vegetable stock

1/2 pound red radishes -- rinsed, trimmed and quartered

1/4 cup long-grain rice

1 teaspoon finely chopped ginger root

1 tablespoon lemon juice

1/2 cup yogurt

 

Saute onions in butter in saucepan until tender. Add broth, radishes and rice.

Cover and cook or 20 minutes until radishes are tender. Pour into blender and

process until smooth. Return to saucepan, stir in ginger and lemon juice and

blend in the yogurt. Warm but do not boil. Serve garnished with chopped parsley.

Stir Fried Daikon

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

2 tablespoons sugar

1 teaspoon cornstarch

3 tablespoons rice vinegar

3 tablespoons soy sauce

2 tablespoons ketchup

1 large Daikon -- peeled and julienne

3 tablespoons vegetable oil

2 tablespoons water

 

Make the sauce in a small bowl from the sugar, cornstarch, vinegar, soy sauce an

ketchup. Heat the oil in the wok and add the Daikon and cook, stirring

constantly for 30 seconds. Sprinkle in the water to cook and continue stirring

until the Daikon begins to turn limp. Pour on the soy sauce mixture and cook

until thickened.
