I just got my recipe notes email newsletter and this was part of it.

Thought the other V-R folks would find this of interest:

VegetarianRecipe.com has

launched! It seems a lot of folks out there enjoy cooking meat-free

dishes

(if not all the time, then at least occasionally). We have received some

wonderful recipes to share with all of our readers. Vegetarian cooking

can

open up a whole new world of tastes for the uninitiated, plus it has the

added benefit of being higher in fiber and lower cholesterol than your

traditional meat-n-potatoes diet. And for those of you that still love

steak, this site is for you too: we have loads of imaginative vegetable

dishes that would compliment any meal whether it includes roast chicken

or

baked tofu. So read on and while you're at it, try a few new recipes!

*** Pssst . . .

Eggplants are delightfully delectable vegetables. They can lend a creamy

richness to many dishes that would otherwise be a bit on the boring

side.

On the downside, eggplant can be bitter and can absorb alot of oil if

not

prepared properly. In just a few easy steps you can prevent both the

bitterness and the oil absorption. First -- peel, slice, cube, chop or

quarter the eggplant as instructed the recipe. Sprinkle the eggplant

pieces

generously with salt and place them in a colander. Let sit for at least

30

minutes, and up to 2 hours. You should see lots of liquid beads forming

on

the surface of the eggplant, blot these juices with a paper towel --

then

quickly rinse under cold water and blot dry. Proceed as directed with

your

recipe.

*** Seasonal Highlights: VegetarianRecipe.com

Just in time to help out with the summer harvest our newest (and

dare-we-say healthiest) recipe site. We have received a bounty of

meatless

dishes from you. Here are a few of our garden-fresh favorites.

Eggplant and Zucchini Casserole: this dish reminds us of the classic

Swiss

Chicken Recipes that always seem to be on everyone's top ten lists. This

meat-free version is a real winner!

Lentil Stuffed Tomatoes: this recipe makes use of one of summer's most

precious foods, tomatoes. Stuffed with a savory rice and lentil mixture,

these tomatoes literally burst with goodness!

Grilled Vegetables in Balsamic Tomato Sauce: this recipe is one of the

staff favorites. The balsamic vinegar seems to enhance the natural

sweetness of the vegetables. This is one dish we could eat every night

of

the week!
