Thought the other V-R folks would find this of interest: VegetarianRecipe.com has launched! It seems a lot of folks out there enjoy cooking meat-free dishes (if not all the time, then at least occasionally). We have received some wonderful recipes to share with all of our readers. Vegetarian cooking can open up a whole new world of tastes for the uninitiated, plus it has the added benefit of being higher in fiber and lower cholesterol than your traditional meat-n-potatoes diet. They can lend a creamy richness to many dishes that would otherwise be a bit on the boring side. On the downside, eggplant can be bitter and can absorb alot of oil if not prepared properly. In just a few easy steps you can prevent both the bitterness and the oil absorption. First -- peel, slice, cube, chop or quarter the eggplant as instructed the recipe. Sprinkle the eggplant pieces generously with salt and place them in a colander. Let sit for at least 30 minutes, and up to 2 hours. You should see lots of liquid beads forming on the surface of the eggplant, blot these juices with a paper towel -- then quickly rinse under cold water and blot dry.
