I'm looking for something I can bake and feel ok about giving to my son, who is 10 months. Or, anyone have a pumpkin cookie recipie and/or directions on how to substitute with apple sauce, that I could manipulate myself? I don't have any pumpkin cookie recipes, but a cookbook you'll want to check out is " Baby Let's Eat! " by Rena Coyle. This is NOT a vegetarian book (sorry), but it does contain lots of healthy recipes for babies and toddlers. The cookie recipes use apple juice concentrate for sweetener. (There are also some dairy-free recipes, for those of you who may be interested in that.) So you might want to check it out for some ideas on converting your own recipes. There are also a few recipes in the " What to Expect " books. The authors of those books recommend sweetening with alternative sweeteners - no white sugar. I am just beginning to experiment with alternative sweeters myself. You might want to try brown rice syrup in recipes that call for honey or sugar.
