We get home from work late and always want to eat right away because we are

starving, so I treasure fast dinners. We had this fast dinner last night

on top of baked potatoes and with fresh strawberries. After dinner I

cooked brown rice and mixed it with the leftovers, and we will have that in

whole wheat tortillas for dinner tonight.

Amount Measure Ingredient -- Preparation Method

29 ounces stewed tomatoes

(Italian, Mexican, or Cajun)

15 ounces black beans, canned

drained and rinsed

16 ounces corn, canned

drained and rinsed

 

Place all ingredients in a medium saucepan and cook over medium heat for 5

minutes, stirring occasionally.

 

Servings: 4

Preparation Time: 5 minutes

Cooking Time: 5 minutes
