Guest guest Posted August 4, 1999 Report Share Posted August 4, 1999 x/p at RecipeCafe: * Exported from MasterCook * Grilled Asparagus with Marinated Shiitake Vinaigrette Recipe By : Yoshi Kojima, Executive Chef mc2 Serving Size : 6 Preparation Time :0:00 Categories : Bbq & Grilling Mushrooms Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 20 lg. pieces asparagus -- 1/4 " cut from bottom 8 shiitake mushrooms -- cut into 1/8 wedges 1 tsp capers 1 roma tomato -- diced 2 Tbsp shallots -- chopped 1/2 Tbsp parsley -- chopped 4 fresh basil leaves -- cut julienne 3/4 cup extra virgin olive oil 2 Tbsp balsamic vinegar lemon juice -- to taste Mix capers, tomatoes, shallots, parsley, basil, oil, lemon juice and balsamic vinegar in a bowl to create marinade. Heat olive oil in sauté pan and cook mushrooms on a very high heat. Add the marinade. Rub the asparagus with olive oil and grill until tender and cooked all the way through. Serve asparagus and shiitakes with marinade drizzled on top. Serves 6.
