Cook, stirring occasionally, for 5 minutes. Add the squash, curry powder, coriander, cumin, and black pepper. Mix well and cook for 2 minutes. Add the 3 1/2 cups water and both kinds of rice. Bring to a boil, cover, reduce the heat to low, and cook for 45 minutes. Add the beans and heat through, about 5 minutes. Stir in the chard and green onions, remove from the heat, and let rest for 10 minutes. Place the water, onion, bell pepper, and celery in a large pot. Cook, stirring frequently, for 5 minutes. Add the mushrooms and seasonings. Cook for 10 more minutes. Stir in the rice, green onions, kidney beans, and black olives. Mix well. Transfer to a covered casserole dish, sprinkle with the grated cheese, and bake for 30 minutes.
