Cavatelli with Arugula and Dried Cranberries

8 ounces dried cavatelli or rotini pasta (3 cups)

1/2 cup vegetable broth

2 cloves garlic -- minced

1 tablespoon olive oil

4 cups torn arugula and/or fresh spinach leaves

1/2 cup dried cranberries

1/2 cup sliced almonds -- toasted

or coarsely chopped pistachios -- toasted

1/4 cup finely shredded Parmesan Cheese

salt and pepper -- at table

 

Cook pasta; drain. Toss with broth and keep warm.

Meanwhile, in a large skillet cook garlic in hot oil over medium heat for 1

minute. Add arugula; cook and stir 1 to 2 minutes or until just wilted.

To serve, in a large bowl combine warm pasta mixture, arugula mixture,

cranberries and nuts. Toss gently to combine. Sprinkle each serving with

Parmesan cheese. Offer salt and pepper.

Variation: substitute currants for cranberries.

NOTES : Arugula (ah-ROO-guh-lah) is also called rocket or roquette. It is a

peppery salad green sometimes mistaken for dandelion. Mature leaves are large

and very pungent. Add a few leaves to accent a mixed salad. Young leaves can be

used alone. Rinse leaves well in cold water, pat dry, and chill in a plastic bag

for up to 2 days. Substitute some or all in recipes calling for young spinach.
