Guest guest Posted July 10, 1999 Report Share Posted July 10, 1999 * Exported from MasterCook * Tuscan White Beans Recipe By : Global Vegetarian, by Jay Solomon, page 121 Serving Size : 4 Preparation Time :0:00 Categories : Beans Global Vegetarian Side Dishes Vegan Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup white kidney beans(cannellini) -- soaked and drained 3 1/2 cups (3 1/2 to 4) water 1 small yellow onion -- chopped coarse 2 whole cloves garlic 1 teaspoon dried thyme 1/2 teaspoon sage 1/2 teaspoon black pepper 2 tablespoons parsley or basil -- minced 1 tablespoon (1-2) olive oil 1/2 teaspoon salt In a medium saucepan, place the beans, water, onion, garlic, thyme, sage, and pepper and cook for about 1 hour over medium heat, stirring occasionally, until the beans are tender. Remove the garlic from the pot; discard or give to a garlic lover. Drain any excess liquid from the beans. Transfer the beans to a serving bowl and fold in the parsley, oil, and salt. Set aside for 15 minutes to let the flavors intermingle. Serve as a side dish or add to soups or stews. - - - - - - - - - - - - - - - - - - NOTES : When in season, blend in 2 to 3 tablespoons of other herbs such as marjoram, oregano, or chives.
