Guest guest Posted June 28, 1999 Report Share Posted June 28, 1999 * Exported from MasterCook * Hot Sauce Recipe By : New Recipes from Moosewood Restaurant, page 193 Serving Size : 1 Preparation Time :0:00 Categories : Moosewood Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 7 fresh tomatoes or 3 cups undrained canned -- chopped 4 cloves garlic -- chopped 2 cups onions -- coarsely chopped 2 medium green peppers -- chopped cayenne to taste* 2 teaspoons ground cumin 2 teaspoons ground coriander salt to taste 2 tablespoons fresh cilantro (optional) -- chopped 2 tablespoons tomato paste (optional) Place the ingredients in a blender or food processor and purée until smooth. Simmer covered on low heat for 1 to 2 hours, stirring occasionally. If you'd like a thicker, darker hot sauce, stir in some tomato paste. Serve hot, at room temperature, or cold.
