Hot Sauce

Amount Measure Ingredient -- Preparation Method

7 fresh tomatoes or 3 cups undrained canned -- chopped

4 cloves garlic -- chopped

2 cups onions -- coarsely chopped

2 medium green peppers -- chopped

cayenne to taste*

2 teaspoons ground cumin

2 teaspoons ground coriander

salt to taste

2 tablespoons fresh cilantro (optional) -- chopped

2 tablespoons tomato paste (optional)

 

Place the ingredients in a blender or food processor and purée until smooth.

Simmer covered on low heat for 1 to 2 hours, stirring occasionally. If you'd

like a thicker, darker hot sauce, stir in some tomato paste.

 

Serve hot, at room temperature, or cold. Hot Sauce can be stored in a jar for

weeks in the refrigerator.
