Fresh mint and pistachios replace basil and pine nuts in this pesto sauce. Double the pesto recipe and freeze half in an airtight container for a super-quick supper later. Prep time: 10 minutes Cooking time: 9 to 11 minutes Degree of difficulty: easy 1. Make Mint Pesto: Puree all ingredients in blender until smooth. 2. Toss hot pasta, Mint Pesto, peas and reserved hot pasta water in large serving bowl. Makes 6 servings.
