Linguine With Mint Pesto And Peas

MINT PESTO

1/4 cup extra-virgin olive oil

1/4 cup water

2 cups fresh mint -- (4 oz total)

1/2 cup freshly grated Parmesan cheese

3 tablespoons chopped pistachio nuts

1 teaspoon salt

1/4 teaspoon freshly ground pepper

--------------------

1 pound linguine -- cooked according to

-- package directions, reserving 1/4 cup

pasta water

1 package frozen peas -- thawed (10 oz.)

 

Fresh mint and pistachios replace basil and pine nuts in this pesto sauce.

Double the pesto recipe and freeze half in an airtight container for a

super-quick supper later.

 

Prep time: 10 minutes Cooking time: 9 to 11 minutes Degree of difficulty:

easy

 

1. Make Mint Pesto: Puree all ingredients in blender until smooth.

 

2. Toss hot pasta, Mint Pesto, peas and reserved hot pasta water in large

serving bowl. Makes 6 servings.
