Guest guest Posted June 26, 1999 Report Share Posted June 26, 1999 * Exported from MasterCook * Mayorquina Recipe By :Elizabeth David, Classics: Mediterranean Food Serving Size : 6 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 cloves garlic -- or to taste 2 medium Spanish onions 1 red pimento 1/2 pound ripe tomatoes 2 ounces leeks 1 small cabbage -- the heart 1 thyme branch 1 bay leaf -- chopped 1 clove 1 tablespoon olive oil 6 cups water -- more or less 6 ounces whole-grain bread 1 teaspoon olive oil pepper Clean and chop all these ingredients and peel the tomatoes. Put oil into a pan, which should not be so large that the oil disappears at the bottom, and when it is warmed put in the finely chopped garlic, then the onions and the leeks. Let this simmer gently for 10 min., stirring with a wooden spoon so that the vegetables melt but do not brown. Now add the peeled and sliced tomatoes and the pimento cut into strips, simmer and stir for another 15 min. Now slowly add about 2-1/2 to 3 pints of hot water and bring to a boil, adding the chopped cabbage, thyme, clove, bay leaf, salt and pepper. Cover, leaving it to simmer for 1+1/2 to 2 hours. In the soup tureen place several large slices of brown or wholemeal bread. Before serving, stir in a tablespoon of fresh olive oil and do not allow the soup to boil again. Pour it over the bread in the tureen, and be sure to have a peppermill on the table so that each guest can season his soup to his own taste.
