TVP Sloppy Joes

Amount Measure Ingredient -- Preparation Method

2 cups dry textured vegetable protein -- (TVP)

2 cups water

15 ounces canned no-salt-added tomato sauce

2 tablespoons cider vinegar

2 teaspoons onion powder -- (or to taste)

1 teaspoon minced garlic -- (or to taste)

1 teaspoon prepared mustard -- (or to taste)

1 teaspoon chili powder -- (or to taste)

Salt -- to taste (optional)

 

Makes 6 servings. This recipe takes 25 minutes to prepare.

 

Combine TVP and 1 cup of the 2 cups water. Set aside for 5 to 10 minutes

or until the water is absorbed.

 

Combine all the ingredients, including the TVP with the water, in a medium

saucepan: cook over medium heat, stirring often, until they are no longer

soupy, or to your desired consistency, about 10 to 15 minutes.

 

Divide equally over 6 slices of bread or inside 6 hamburger buns.

1 cup TVP

3/4 cup Boiling water

1 Green bell pepper -- diced

1 Onion -- minced

1 Stalk celery -- minced

1 Carrot -- minced

1/3 cup Water

2 8 oz cans tomato sauce

1 1/2 tablespoons Red wine vinegar

1 tablespoon Molasses

2 tablespoons Chili powder

1 1/2 teaspoons Garlic powder

1/4 teaspoon Tabasco sauce

Hamburger buns

 

Combine TVP and boiling water and set aside. " Saute " bell pepper, onion, celery

and carrot in 1/3 cup of water in a deep skillet or dutch oven until soft, about

5 to 7 minutes. Add TVP and remaining ingredients and cook over medium heat for

5 to 10 minutes until heated through. Serve on toasted hamburger buns.

1 pound tempeh -- defrosted and cut into large chunks

OR

1 pound tofu -- crumbled

OR

1 cup TSP -- rehydrated in 1 cup boiling water

2 tablespoons vegetable oil

1 package taco seasoning

1/2 cup water

6 corn tortillas -- warmed

1 can vegetarian refried beans -- heated

Chopped tomatoes

Chopped lettuce

Chopped scallions

Salsa

 

In a large saucepan, place the tempeh chunks in the oil. Crumble the tempeh

chunks with the back of a fork, then cook the tempeh (or the tofu or TVP) over

medium heat for about 10 minutes. Add the taco seasoning and water to the

saucepan; cook until the sauce is thick and the tempeh, tofu, or TVP is

completely coated.

 

To serve, spread each tortilla with a generous layer of the refried beans. Add

several heaping spoonfuls of tempeh, tofu, or TVP. Sprinkle with chopped

tomatoes, lettuce, and scallions. Top with salsa.

3 tablespoons olive oil

1 28 oz. can stewed tomatoes -- broken up (w/liquid)

1 15 oz can Mexican-style tomatoes -- broken up

(w/liquid) (15 to 16)

3 tablespoons chili powder

1 tablespoon Tabasco sauce

2 medium onions -- chopped

2 15 oz can kidney beans -- rinsed & drained

(15 to 16)

2 cloves garlic -- minced

OPTIONAL: 1/2 cup TVP granules

OPTIONAL: habanero powder to taste*

 

Heat olive oil in a large skillet or Dutch oven. Add onions and garlic and

cook until soft. Add stewed tomatoes and spices and simmer about 30 minutes.

Add beans and simmer another 20-30 minutes.

The cooking time is very flexible. The main reason for the longer cooking

time is to allow the spices to blend with the other ingredients.

1 pkg. Morningstar Farms " breakfast links " -- thawed

1/2 cup TVP granules

 

Prepare gumbo mix according to package directions. Cut " breakfast links "

into bite size pieces and add pieces and TVP granules to gumbo. Simmer 20-25

minutes per package directions.
