Here are some hummus recipes. When we make hummus at home, we simply use

garbanzo beans, some tahini, garlic, lemon juice and a tiny bit of olive oil

(all amounts according to your own taste) and run it through the blender. We

like it with a lot of garlic and lemon. ;-)

Yummy Black Bean Hummus

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 15 ounce can black beans -- rinsed and drained

15 ounces garbanzo beans (chick peas) -- rinsed and drained

1/2 cup water

OR

1/2 cup bean liquid

3 tablespoons lemon juice

2 tablespoons olive or vegetable oil

1 teaspoon sesame oil

1/4 teaspoon ground cumin

Salt and pepper to taste

2 cloves garlic -- finely chopped

2 tablespoons chopped fresh parsley

Pita bread or raw vegetables -- if desired

 

Place all ingredients except parsley and pita bread in blender. Cover and

blend on medium speed until smooth. Place in serving bowl. Sprinkle with

parsley. Cover and refrigerate about 2 hours or until chilled. Serve with

pita bread.

Hummus

Amount Measure Ingredient -- Preparation Method

2 cups dried chickpeas -- soak overnight in water, to cover

1 teaspoon baking soda

2 teaspoons salt

6 cloves garlic

3/4 cup lemon juice

1/2 cup tahini

 

Cook the soaked beans until well done and then strain. Put the beans in a

food processor and purée, then add the rest of the ingredients, except the

lemon. Add the lemon gradually until you get the right texture and taste.

Hummus

Amount Measure Ingredient -- Preparation Method

1 tablespoon sesame oil

1 small onion -- chopped

1 clove garlic -- minced

1 can garbanzo beans -- drained

2 tablespoons sesame seeds -- toasted lightly

1/2 cup sesame butter

1/4 cup fresh lemon juice

1/2 teaspoon turmeric

1/4 teaspoon salt

 

Sauté onions and garlic in sesame oil until just tender. Purée beans in food

processor. Add onions, garlic, and remaining ingredients and blend until

desired consistency. More sesame oil may be added if mixture is too thick.

Garnish with parsley and additional toasted sesame seeds, if desired.

 

Serve with toasted pita triangles.
