Guest guest Posted May 30, 1999 Report Share Posted May 30, 1999 * Exported from MasterCook * Hot-and-Sour Cabbage Salad from Jump Up and Kiss Me Recipe By : Jennifer Trainer Thompson, Jump Up and Kiss Me Serving Size : 6 Preparation Time :0:00 Categories : Cookbooks Salad Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 clove garlic -- minced or pressed 2 serrano chiles -- cut in half, seeded, and finely sliced (about 2 tablespoons) 1 teaspoon habanero chile -- minced and seeded fresh 2 tablespoons lime juice -- freshly squeezed 2 tablespoons apple cider vinegar 2 teaspoons granulated sugar 2 tablespoons light soy sauce 2 tablespoons dark sesame oil 1 pound green cabbage -- shredded finely (about 6 cups loosely packed) 2 scallions -- large, cut into 3-inch lengths and shredded (about 1/2 cup) 2 radishes -- cut in half and thinly sliced crosswise 3 tablespoons basil leaves -- finely sliced fresh 3 tablespoons cilantro -- finely chopped 1/2 cup cashew nuts -- finely chopped, for garnish In a large bowl, combine the garlic, chiles, lime juice, vinegar, sugar, soy sauce, and sesame oil. Add the cabbage, scallions, radishes, and herbs, and mix well. Refrigerate for about 1 hour. Just before serving, sprinkle each serving with cashews. Variations: substitute crunchy bean sprouts or shredded carrots for a portion of the cabbage. This dish is also pretty garnished with tomato, watercress, and a slice of lime.
