Guest guest Posted May 23, 1999 Report Share Posted May 23, 1999 I made 3 very impromptu quesadillas tonight, with no m**t. I had some leftover cooked baby potatoes, some shiitake and button mushrooms, some zucchini, salsa, shredded cheese and some chiles. So I diced up the chiles, sliced the zucchini and the mushrooms and chopped up some soy " chorizo sausage " made by Frieda's (I've been dying to try this stuff). This is what I did (sorry it is not in Mastercook): @@@@@ Risa's Saturday Night Quesadillas | Risa Golding | 2 flour tortillas (fajita size) 1/2 zucchini, sliced 1/4 Frieda's Soy Chorizo, casing taken off 3/4 cup salsa, with olives 1 serrano chile (with seeds), minced 4 new potatoes, cooked & sliced 4 shiitake mushrooms, stemmed & sliced* 4 button mushrooms, stemmed & sliced 1/2 cup Monterey jack or Cheddar Cheese, shredded** | Heat a nonstick skillet. When hot, spray with some nonstick cooking spray. Saute the soy chorizo with the zucchini. When brown, remove from pan and set aside. Place mushrooms, potatoes, and serrano chile in pan. Saute until mushrooms and potatoes are browned and chile is cooked. When brown, remove from pan and set aside. Place a tortilla on work surface. Spread with some of the salsa, the soy chorizo mixture and sprinkle with some shredded cheese. Place this mixture on the bottom half of the tortilla. Fold over. Place another tortilla on work surface. Spread lower half with salsa, the mushroom mixture and sprinkle with shredded cheese. Fold over. Spray a bit of cooking spray. Place first folded tortilla in pan. Place a heavy skillet on top of it. Let it brown. This takes about 5 minutes. When brown, flip over carefully (not letting the insides fall out). Place the pan back on top and let the underside brown. When brown, remove from pan and set aside. Put the other quesadilla in the pan, cover with the heavy pan (cast-iron is best) and let brown. Finish the way you did the other one. When ready to plate, put one on a plate and cut in half. Place the other half on the 2nd plate. Do the same with the other quesadilla. This way you have 2 plates with 2 halves - one of each kind. Finish plate with some of the remaining salsa and any other condiment you wish - sour cream is great. If you are trying to lose weight, then your favorite non-fat sour cream is just fine (that is what I use anyway). Also any type of hot sauce is appropriate. A sprinkling of chopped cilantro would be wonderful. Makes 2 servings as an entree and 4 servings as an appetizer. * do not use the stems of the shiitake. Discard them. ** I used a packaged mix of several shredded cheeses. Kraft makes them in Taco version and Sorrento or Sargento make them in 4 Italian cheese mix and things like that.
