Michelle: Here are 3 recipes I found for you. The first one was posted here by

Ellen C. awhile back -- thanks Ellen!! Basically, for vegan French Toast, what

you want to do is replace the milk -- soy or rice milk and, of course, the eggs.

The eggs can be replaced with an equal amount of blended soft tofu. The

question I have is that if blended tofu is used then, do you think, just water

should be used instead of soymilk -- otherwise, would the mixture be too

" soy-y " , do you think? I've never tried any of these recipes myself. I'm the

only one in my family who doesn't eat eggs, and I was never a huge fan of French

Toast anyway, so, what's the point? <g> If you try any or all of these, will

you let us know how they are? Thanks!

Banana French Toast

2 ripe bananas

1 cup soy milk

8 slices whole wheat bread

 

Blend the bananas and soymilk until completely smooth. Pour into a large bowl.

Dip the bread into this mixture and cook on a lightly oiled, hot griddle until

just browned on each side.

French Toast

Amount Measure Ingredient -- Preparation Method

1/2 pound soft tofu

1 1/4 cups water

1 teaspoon honey or sweetener of your choice

1/4 teaspoon vanilla extract

pinch ground turmeric -- (for color)

8 slices bread (whole-wheat or sourdough)

 

Place the tofu, water, honey, vanilla, and turmeric in a blender or food

processor and process until smooth. Transfer to a large bowl. Dip slices of

bread into the mixture to coat both sides well. Cook on a dry nonstick griddle

until brown on both sides.

French Toast Royale

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 cup soymilk

2 tablespoons flour

1 tablespoon nutritional yeast flakes

1 teaspoon sugar or sweetener of your choice

1 teaspoon vanilla

1/2 teaspoon salt

pinch of nutmeg

6 slices bread (whole wheat, white, etc.)

 

Blend or whisk together all the ingredients except bread slices in a shallow

bowl.

 

Dip the bread slices into this mixture and cook, either on a nonstick griddle

until browned on both sides, or on a greased cookie sheet in at 400 °F oven

until golden on both sides, turning once. For an interesting change of pace,

bake the French toast in a nonstick waffle iron until golden brown.

 

Serve with maple syrup or your favorite topping.

 

VARIATION: Banana French Toast: Omit 1/2 cup of the soymilk and the flour and

blend the remaining ingredients with 1 ripe banana.

NOTES : You can also use low-fat tofu in this recipe and still get delicious

results.
