Pasta Cannellini

Amount Measure Ingredient -- Preparation Method

2 cups uncooked pasta nuggets {radiatore}

2 teaspoons olive or vegetable oil

1 cup thinly sliced onions

1 clove garlic -- minced

1 28-ounce can whole tomatoes -- undrained, cut up

1 15-ounce can cannellini beans -- drained, rinsed

1 teaspoon dried oregano leaves

 

1. Cook pasta to desired doneness as directed on package.

2. Meanwhile, heat oil in large nonstick skillet over medium heat until hot.

Add onions and garlic; cook and stir about 6 minutes or until onions are

tender. Add tomatoes, beans, and oregano; mix well. Bring to a boil. Reduce

heat; simmer 5 to 10 minutes to blend flavors.

3. Drain pasta. Serve sauce over pasta. If desired, sprinkle with grated or

shredded Parmesan cheese.
