I can't remember where it came from though, I think one of my cookbooks at home... Enjoy Hannah MMMMM----- Recipe via Meal-Master v8.06 Title: Rice Lentil Casserole Categories: Casserole, Vegan Yield: 4 Servings 3/4 c Green lentils 2.5 c Vegetable stock 1 Bay leaf 1 1/2 c Basmati or long grain rice 1 tb Dry dill 1 tb Dry parsley 1 Onion chopped Salt and pepper to taste 2 1/2 c Vegetable stock (you may need a bit more for The rice) Cook the lentils, bay leaf and onion in the first 2.5 cups of vegetable stock for about an hour or until tender. When the lentils are about half way done cook the rice in the remaining vegetable stock (about 15 minutes). Add more stock to either the lentils or rice if they get low. Drain the lentils and remove the bay leaf. Mix with the rice and seasonings. Put this mixture in a casserole and bake in preheated 350 F oven for about 15 minutes.
