Guest guest Posted May 4, 1999 Report Share Posted May 4, 1999 * Exported from MasterCook II * Black Bean Casserole Ole' Recipe By : Hinman and Snyder Serving Size : 6 Preparation Time :0:00 Categories : Beans Casseroles Corn Cornmeal Green Chilies Onions Tomatoes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Tbs Olive Oil 1 Cup Chopped Onions 3/4 Cup Plus 2 Tbs Cornmeal -- (4 1/2 oz) 2 Tsp Chili Powder 1 1/4 Cups Skim Milk 1 1 Lb Can Black Beans -- drained/rinsed 1 1 Lb Can Whole Kernel Corn, Drained 1 1 Lb Can Stewed Tomatoes 1 4 0Z Can Green Chilies, Mild Or Hot -- drained 1/4 Cup Shredded Low Fat Cheddar Cheese -- (1 oz) Preheat oven to 350 degrees. Lightly oil an 8 " square baking pan or spray with a non stick cooking spray. In a large bowl, combine all ingredients except cheddar cheese. Mix well. Place in prepared pan.
