Leek And Potato Soup

3 Cups Diced Russet Potatoes

3 Cups Thinly Sliced Leeks, White Part With 1 -- -2 " of pale

green

5 1/2 Cups Vegetable Broth Or Water

1 Tsp Salt

NOTES : Place ingredients in a large saucepan and bring to a boil over

medium high heat. Reduce heat, cover and simmer 25-30 minutes,

until vegetables are tender. Puree in a blender or food processor

until smooth. Serve hot or chill.
