Guest guest Posted April 14, 1999 Report Share Posted April 14, 1999 * Exported from MasterCook II * Red Lentil Soup Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Lentils Sharon Sassaman Claessens Soup The No Tofu Veg Cookbook Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 Tsp Olive Oil 1 Large Onion -- chopped 1 Cup Diced Carrots 2 Cloves Garlic -- minced 1/4 Tsp Ground Coriander 1/3 Cup Red Lentils 1/4 Cup Quick Cooking Barley 4 Cups Vegetable Broth 1 Tbs Minced Fresh Parsley -- for garnish Heat the oil in a large saucepan over medium high heat. Add the onion and cook, stirring frequently until tender, about 4-5 minutes. Add carrots, garlic, coriander and cook, stirring 1 minute. Stir in lentils and barley until combined. Add broth and bring to a boil. Reduce heat, cover and simmer 15 or 20 minutes, or until ingredients are tender. Place soup, one half at a time in a blender or food processor and process until smooth.
